Top Tier Rice Salad


Rice Salad:
  • 1-1/2 cup cooked brown rice (warm or cold okay)
  • 6 oz. diced, cooked, skinless chicken breast (warm or cold okay)
  • 2 cups red cabbage, shredded
  • 1 green onion, chopped
  • 1 tsp. whole sesame seeds
Dressing:
  • 1 Tbsp. extra-virgin olive oil
  • 2 Tbsp. rice wine vinegar
  • Juice of 1 slice fresh lemon
  • Pepper and sea salt (to taste)
Combine brown rice, chicken, red cabbage, green onion, and sesame seeds in a large bowl. Thoroughly whisk together dressing ingredients. Add to salad and toss. Makes 2 servings.
